Depuis la fin du 19e siècle, la plus ancienne fromagerie familiale des Hautes-Alpes fabrique, selon la tradition artisanale, ses fromages au lait cru de la vallée du Champsaur : lait de vache, de chèvre et de brebis. La cave d'affinage n'a presque pas changé. Depuis plus de cent ans, les tommes, bleus et autres fromages s'affinent dans cet espace tout en pierre. C'est l'arrière grand-père Charles EBRARD, qui est à l'origine de "l'aventure" lancée en 1890 au village de Saint-Laurent du Cros. Au départ, il n'y avait que des tommes et gruyères, produits à la demande des producteurs de lait.
